The carrots in this recipe are cut into coins and marinated in a dressing that gives them them the appearance of burnished pennies; hence the name. Southern brides often carry a penny from the year they were born to help ensure a prosperous marriage and good luck.
The mixture needs to marinate for 12 hours in the refrigerator.

Directions
Step 1
Bring a large pot of water to a boil over high heat. Stir in the pinch of salt, then add the carrots. Cook for about 5 minutes, just until crisp-tender; do not overcook. Drain and transfer to a large bowl.
Step 2
Add the celery, onion and bell pepper; toss to mix well.
Step 3
Combine the soup, sugar, vinegar, oil, Worcestershire sauce, mustard and pepper in a medium saucepan over high heat, stirring until the mixture just comes to a boil, about 2 minutes. Remove from the heat.
Step 4
Pour over the vegetable mixture in the bowl and stir to coat evenly. Cover and refrigerate for 12 hours before serving.
